tabbouleh recipes

I LOVE LOVE LOVE Greek food and my herbs are doing awesome this year so I decided to google some Greek recipes that use parsley and mint...here is the first of many.

Found the bulgar wheat...
Tomato, cucumber and onion from a friend's garden...



Parsley from my herb garden!!!!...


The finished product....YUM!!

The recipe...


1 1/2 cups bulgur
1 1/2 cups boiling water
1/8 cup olive oil
1/3 cup lemon juice
1 cup chopped green onions
2 cups chopped fresh parsley
6 leaves chopped fresh mint
1 tomato, chopped
1 cucumber - peeled, seeded and chopped
4 oz. feta cheese (I used reduced fat)

1 teaspoon salt
ground black pepper to taste



Directions
Combine bulgur and boiling water in a large bowl. Cover, and set aside to soak for 1 hour.
Add oil, lemon juice, onions, parsley, mint, tomatoes, and cucumber; toss to combine. Season to taste with salt and black pepper. Cover, and refrigerate for at least 1 hour.

YUM!!!!!!!!!!!! And healthy!!
