tabbouleh recipes

I LOVE LOVE LOVE Greek food and my herbs are doing awesome this year so I decided to google some Greek recipes that use parsley and mint...here is the first of many.

Found the bulgar wheat...
Tomato, cucumber and onion from a friend's garden...

Parsley from my herb garden!!!!...

The finished product....YUM!!

The recipe...

1 1/2 cups bulgur
1 1/2 cups boiling water
1/8 cup olive oil
1/3 cup lemon juice
1 cup chopped green onions
2 cups chopped fresh parsley
6 leaves chopped fresh mint
1 tomato, chopped
1 cucumber - peeled, seeded and chopped
4 oz. feta cheese (I used reduced fat)

1 teaspoon salt
ground black pepper to taste

Directions
Combine bulgur and boiling water in a large bowl. Cover, and set aside to soak for 1 hour.
Add oil, lemon juice, onions, parsley, mint, tomatoes, and cucumber; toss to combine. Season to taste with salt and black pepper. Cover, and refrigerate for at least 1 hour.

YUM!!!!!!!!!!!! And healthy!!

Tomorrow - Greek bean salad!!! Soooo yummy and soooo healthy!!

Awesome Concert

Work has been insane so my posting may slow down a bit - sorry in advance!!
I just realized that I never posted the concert pictures from last week - what a slacker!!!
Well, wait no longer, here they are!!!!!!!!!

Leroy "Something or Other" opened the show (they were okay) and then came Sheryl Crow!!!! She was great!!!

Here is a non-zoomed in view from our seats! (That is Leroy playing there too). They were really good but we all decided to spring for VIP next year and be in the FRONT row - can't wait!!!!!!!

6 Days Till "Pimpin'"

COUNTDOWN TO KIDROCK!!!

I may lose half my followers with this post but I hope to convince you to open your minds.....HA!!

I love Kidrock - he is soooo hot and sooooo sweet - I actually met him before a concert in Pgh a few years ago and he is soooooo humble and down to earth I fell in love - really!!!

His cousin passed away from addiction and he sings so many heartfelt and beautiful songs along with the others that I cannot mention!

I am going to the concert with my bestest buddy Sherry and a friend of ours Ed. It is going ot be interesting to see their reactions...I gave them CD's so they knew what they were getting into - HA!!!!

Anyway - 6 MORE DAYS UNTIL KIDROCK - and I know one of my bloggy friends' husband works on Roberts (Kidrocks) car and I would not protest if she showed him this blog post and gave him my address...I live in a condo with a big parking lot so his tour bus would fit JUST FINE!!!!!!!!!!

1.} What is the best, or worst, pick up line you have ever been given?

If the eyes are the portals of hope then you give me hope to live! Really?!?!?! What is that?!?!?!? Other than scarrrrrrrrry!

2.} What is your most and least favorite day of the week?

Most favorite is Friday - LOVE Friday and the weekend....and for the same reason seriously dislike Monday - back to work; weekend over :-(

3.} How many hours of sleep do you require each night?

6 - 8 usually will do (I prefer 8 but usually get 6 - 3 if you count the cats jumping on me and waking me up all night-LOL)

4.} Is there a song that takes you back in time? What is it and what memory is it attached to?

Who's Gonna Take You Home - The Cars - I don't really even like the song but everytime I hear it I remember making out in the backseat of someones car on a double date....he was a big football star in our area and I will never forget how cool and OLD I felt - WOW!!! The memories associated with that song are HUGE! Just humming it now in my head and I am right back there! Weird!

5.} What is your biggest guilty pleasure?

It has got to be chocolate - I LOVE chocolate anything!! I live near an amazing chocolate maker named Sarris so that does not help also! Also, I love massages and anything associated with a spa!!!!!!!!! YIPPEE!!!

I LOVE NATURE!!! I was driving to my meeting Saturday morning after spin class and I saw this...how cute!?!?!?! Bambi and her little kids on the side of the road - this is a close as my cell phone would zoom in - good thing there was no-one else on this road as they would have probably plowed into me since I stopped right in the middle - LOL!!!!

Here is the pepper plant itself.......so big and loaded with peppers and flowers!





I am eating this today!!! First tomato from my crops!! LOL!!! I had my doubts about trying the Topsy Turvy but it is the first to have a red fruit!!!!! Yeah Topsy Turvy!!!!!!

First strawberry - I did not eat this as i pulled it off and the underside was moldy....not doing so swell on the strawberry plant :-(

This is Mint and Italian Basil....very anisy flavor.....YUM!!!!!!!!!!!

These are rosemary and basil....I plant LOTS of basil!!!!!

This has Texas Tarragon, Curley Parsley, Basil and Spearmint - I have almost depleted my mint crops as I found this new recipe for beans/mint/feta that I love - I will post that tomorrow...it is sooooooooooooooooo good......I am making it CONSTANTLY!

Flip Flop Swap

I am soooooooooooooooooo super excited!!!! I got home from work last night and this was waiting at my door!!!!!!!! :-)

Yes it was from - my FLIP FLOP SWAP partner - Amy at Nine Ninety-One!!!!!!!!!




I ripped it open - LITERALLY - and found this sweet and sooooo cute note to explain what is inside!

How ADORABLE!!!!!! LOVE THESE!!!!! Seriously, I wore them around the condo all night last night (they felt amazing after my sore feet from spinning) and cannot wait to wear them to my meeting tonight - super cute!!!

Another angle of my new flip flops!!!!!!!!!!!!! Did I mention not only sooo cute but sooooooooo comfy!

And this adorable windchime was also included! We were supposed to add something from our state and Amy is from Tennessee - so instead of sending me a big "T" (which I would have found some use for - LOL!!!) she sent something orange which is a big color for their state!!!! I LOVE IT!!!! Next time Waliacha is over I will make him add me a hook in a better place on the deck but for now I just wanted to get it hung so I could hear its chimes...it is the one on the left with the dragonflies........LOVE!!!!!!!!!
