Father's Day Weekend 2011

Father's Day weekend was amazing!! It was soooo much fun and we had amazing weather and got to spend the majority of the weekend out on the lake - yippee!!!!

Here is Poppy (my daddy) with Ryan one of his grandkids-it is hillarious - Ryan always wants to help Poppy drive the pontoon but as soon as he is on his lap he falls asleep - EVERYTIME - hillarious!

Greek Love!

I HAVE THE GREATEST HEALTHY RECIPE FOR YOU GUYS!


If you like Greek food (ie: grape leaves, hussus, etc.) then you will LOVE this recipe!


I was getting a pedicure two weeks ago and my nail tech mentioned growing herbs. I told her I also have many plants and my patio looks like a jungle. We started sharing what we grow and found out we both are growing spearmint. I use it in tea and salads and she said I had to try this recipe.


Again, this was two weeks ago!!! I have made it at least three times since.....for about three days I ate it for breakfast, lunch and dinner - soooo yummy and good for you! So, I am sharing and I PROMISE you will love it!!!! TRY IT!!


Greek bean salad

2 can drained and rinsed black beans
1 cup chopped onion (you can use less but I LOVE onion)
8 oz reduced fat feta (you can use regular)
1/2 cup chopped mint leaves

Mix the above all together in bowl then...

shake together 1/4 cup of lemon juice and 1/8 cup of olive oil

pour that over the bean mixture.....ENJOY!!!

It is good right away but is even better after refrigerated for at least a few hours so the flavors marry!!!!

Flip Flop Love

I am participating in a flip flop swap that is being hosted by Becca at The Texas Darlings. This is actually the third annual so I am grateful to be able to be a part of it!!!! YIPPEE!!!! I love this stuff!!!

This has been one week full of fun shopping and I will be mailing her swap package out tomorrow (initially I was going to post the contents here but since she is (I think) now following my blog I don't want to kill the suprise)..LOL!!!!

We had our annual Employee Appreciation Salad Day today at work. This is just one of the committees I am a part of at work. It is so much fun planning the employee stuff - I love it!

Anyway, we used Flag Day for the excuse for the partiotic decorations - LOVE THEM!!!

My new favorite snack at work! Frozen edamame...yum!!!

By the time I eat them at work they are no longer frozen but fresh and cold and YUMMY!!!

We have new babies at my house!!!At least one that I saw!!! Here is a photo. I got home last night and one of my three pregnant fishes started to have babies....I only saw one but they are GREAT hiders and I have a lot of plants for them to hide in...I hope a few survive....I think I need to change my blog to a nature blog with all these animals lately - LOL!!!
